My organisation has recently de-registered for VAT. How do I update Quickbooks safely to reflect this, without losing our historic VAT information?

the best thing to do in your QuickBooks account will be to change the default tax code in the accounting section in the account and settings. This can be found under the advanced tab, this will then set default tax rate on transactions to No VAT.
