Yes, you can assign a billable hourly rate to a particular employee, aladdinelectric.

You'll want to create a service item that will hold the rate and select it when you enter a weekly timesheet.

QuickBooks will automatically pull up the rate based on the item you've previously created. Thus, you won't have to enter each line.
