It's good to know you have tried to edit the customers details to remove the email address. Please know that changes will apply to future invoices only. For previously created invoices you'll have to manually edit them and remove the email address of the customer.
To isolate the situation encountered let's use an incognito window to remove the email on file. Here's how:
Then, create a new dummy invoice to verify the information shown on the invoice.
Drop by again in the Community if you have further invoice concerns.
