I'm here to share insights about having PayPal or credit card payments on invoices in QuickBooks Online (QBO), @scott42.
When you turn off PayPal sync in QBO, the option to accept card payments (online) with PayPal will no longer be possible. You may either turn it on again or verify with PayPal if they can provide you the file to manually import invoice payments in QBO.

I understand how to connect PayPal, the issue is you need to have Paypal connected to be able to collect payments on invoices.
For me, I don't want Paypal to collect fee or sale information and or import it into QuickBooks. I only want to connect to Paypal so I can utilise invoicing - is this possible?

QuickBooks Online has partnered with PayPal to give our customers an option to collect online payments. Part of the integration is the collection of applicable fees. It also shares sales information such as customer's name, amount, and sales taxes.

At the moment, there's no option to use the PayPal option without the fees. If the Connect to PayPal feature is turned off, customers will not be able to pay the option directly from the invoice.
You'll want to provide your PayPal information directly to your customers so they can process the payment outside of the program.
