I am trying to enter expense transactions to go under a fixed assets account. However, every time I enter the account category, then type in the description the category disappears the transaction line is grey out.

Can you please advise what is going on here please, as I have had it happen a couple of times before.

I've checked here on our end and there's no reported case where customers can't enter an expense in QuickBooks Online (QBO). There are times when a browser's cache data becomes full or damaged. When this happens, it prevents you from entering an expense transaction.
We can use your browser's private browsing mode to enter the account category. This mode doesn't use the existing cache data and helps us confirm browser-related issues.
Then, create an expense and enter the account category again.
If it works, it means that you need to clear your browser's cache to offload some data from your browser. This way, your browser would get optimized and we'll be able to permanently resolve the issue.
You can also use other supported, up-to-date browsers like Google Chrome, Internet Explorer or Mozilla Firefox to be thorough.
