Based on what you've described, I'd like to learn more about how you're banking hours in QuickBooks. The reason I ask is that, at this time, QuickBooks doesn't offer the feature to save banked hours. The best workaround to this would be manually keeping track of the banked hours outside of QuickBooks. I recommend Excel or any other software which allows you to enter and save info. I know how important it is to have such a feature in QB and I encourage you to Send the valuable feedback to our product developers.
