I have a set of books being kept on QuickBooks Enterprise Solutions 14.0. I would like to transfer the books to QuickBooks Pro 2019. Is this possible?
Yes it is possible but not by you. You need a third party to convert your data. @Anonymous can help you with that. I am sure there may be others but Big Red Consulting is a trusted and wise All-star here (I get no referral fees and am not affiliated, in fact once a football season we lock horns)

Do you (or anyone else) know of a company that provides a conversion service like @Anonymous but for Canada? I have already reached out to BRC and they would not recommend anyone that can do Canadian QB file conversions. We have 10 days until our current QB expires... getting desperate!!
I'm with the Canadian support team and can help with answering this question. It's great to hear that you'd like to stick with QuickBooks's Desktop platform. Within the program itself, there isn't a way to go from QuickBooks Enterprise to QuickBooks Desktop Premier, but there are options apart from finding a third-party service that can do it for you.
Exporting lists from Enterprise to import into Premier will allow you to go from one to the other without completely starting from scratch. I'll link a few articles for you below so that you can familiarize yourself with the options.
Re-entering your transactions and opening balances into the Premier file will allow you to continue where you left off in Enterprise. If you used to use Premier before Enterprise, you can also consider restoring a back-up file if you have one as a starting point to build off of when re-entering the data you need.
The other option is to have our Data Services team convert the file for you. One of our phone agents can help you with this process and let you know more information about time-frames and any associated fees.

We may recommend a conversion service provider for your case. Their standard fee is $225 with a turnaround time within 6 hours (excluding holidays). Should you interest, PM me for details
If QBO CA offered an export to QBDT-CA , which it does not, you could despite all warnings - export Enterprise to QBO and then in turn export QBO to QBDT but there is no such provided path
