Thank you for confirming the type of payroll system you have. Let me take care of this query for you.
Here are the steps you need to take to change your director to an employee:
Be advised, the employee will continue to pay NI as a director until the end of the current tax year. Also, the date you change the company director status should have the same date as to when the director becomes a regular employee.
On a different note, if a director leaves your company then you process him as any other leaver. You can find the steps in this article: Process a leaver in QuickBooks Online Standard Payroll.

We have 3 payroll systems, Paysuite, QuickBooks online standard payroll and QuickBooks online advance payroll, which one of these are you using?
