I appreciate you for getting in touch with us about the missing information in the EZ template. I would feel the same way too in that situation if I'm unable to add the information.
Since the option to include currency is unavailable, I recommend sending feedback to our product engineers. We always update the features in QuickBooks Online, and this preference might be available in the future.

When you import a custom template for invoices, the option to assign a currency is unavailable. This is because, QuickBooks will automatically detect and assign a currency when you add the customer to a sale.
After importing the template, you will see the customer's currency under Balance Due. See this multi-currency customer's invoice using a EZ template:
If you're not seeing any currency after using the template, use a private window and create the invoice there. Incognito mode will not save any history making it a good place to identify browser problems. To start incognito mode, use these keyboard shortcuts:
If you no longer see this alert in private browsing, clear the browser's cache. This will help delete the history of the browser, so you can start in a clean slate.

The currency for the customer is part of the customer record in the QBO dataset, it should therefore be part of the EZ template fields that you can add to the header of the invoice like the customer name, address and so forth. Alternatively, it should be part of every monetary fields in EZ Template, not merely a single end monetary value.
