When your reports will show Statement of Activity instead of Profit and Loss, your company type has been modified. I've got the steps on how we can change it:
Afterward, let's sign out from the account to ensure that the changes have applied. Then, let's run the Profit and Loss report again.

Thank you - that explains it.
The company file had just been uploaded from QB Mac 2019. In the desktop file under Quickbooks > Preferences > My Company, the Income tax form used was set to Form 990 (Exempt Organization).
After uploading, in QBO, the Tax form field was blank, and in Reports > Business Overview had the names I was familiar with.
Two of us are working on our migration. The other person changed the Tax Form field in QBO, so when I came back after that was done, the old reports were "missing".
It appears the "fix" to this problem is me learning a different set of report titles.
