Thank you for coming to the QuickBooks community for answers. While it doesn't look to be a reoccurring issue with any other QuickBooks Self Employed Users. I want to make sure you're properly Categorizing and editing your transactions. I'm providing steps from the following link to make sure we're on the same page.

Categorize a transaction
When you make an expense as business, we try to assign the expense to the correct business category. You can change it yourself by tapping the blue field that appears right after you swipe the transaction left.
Edit a transaction you already reviewed
If you follow these steps your transaction categorizations should be correct.

Thanks for your response. I am properly reviewing and categorizing transactions. The issue I was having was only happening to some of the transactions I reviewed. Other transactions stayed reviewed and categorized. I am quite familiar with Quickbooks, and the problem doesn't seem to be connected to anything I am doing. It seems like a glitch.
Thanks for coming back, @mls237. There are times that QuickBooks behaves unexpectedly when the browser used holds too much cache and temporary internet files.
To confirm, let's use a private or incognito window. Log in to your QuickBooks account and start reviewing your transactions. Use these following shortcut-keys to start:
If it works, that means you're experiencing a browser-related issue. Troubleshoot your main browser to fix the issue by clearing the browser cache and temporary Internet files.
If it's still an issue, use a different supported, up-to-date browser. It helps you learn about system requirements for QuickBooks Online.
