I do make reconciliation from July 01, 2020 up to January, 2021. everything is good but las week I do make some changes in some accts code that affects so much all my previously reconciled months. I would like to undo and redo everything. Do I need to undo first all the month from July to January then redo it again?

Yes, it is recommended to undo and redo your account reconciliation from the latest to the oldest session where you've identified the discrepancy. It may take a lot of work but rest assured, it'll help you determine why your account reconciliation is off and fix it accordingly.

I undid all the "r"s how do I put in my opening balance it still says last reconciles on 7/12/21

I'd like to share ideas about reconciliation.
The reconciliation report won't disappear in QuickBooks even after removing the R status. You can correct the balances and create a new reconciliation instead.
Also, I recommend you get in touch with your accountant to remove the report or undo the reconciliation, if needed.
