I have 1 employee whos CPP and EI suddenly stopped deducting. Can anyone tell me why amd how to fix this?

When CPP and EI stopped calculating, it's possible that the employee has reached the annual maximum or wage cap.
You can run the Payroll Summary report and review the total deduction of CPP and EI.
