Can you edit how the employees name is entered in QB? Meaning can I have it be alphabetized by the first name and/or the last name?

Yes.

To change it, go do Edit | Preferences | Payroll & Employees | Company Preferences | Display Employee List By and then pick either First Name or Last Name.
