I have a small balance outstanding from 2017 in employee receivables that I am trying to ZERO OUT

It seems that what you're referring to "employee receivables" is a deduction or loan from your employee. If I'm correct, then you can create a journal entry to zero out the balance. From the + New button, simply click on Journal Entry. This way, we can credit the receivable and debit it to another account where you want to post the amount.
I also suggest seeking some guidance from your accountant when creating it. Once done, let's visit your Chart of Accounts to check again the balance. You can also use the Journal report to review all the journal entries you've created. You can pull up this report on the Reports tab.
