Where is employee time sheets stored?

You asked a mix of things:

"I can run Employee Earnings Summary"

That's Paycheck data. That's pay period based. For each Date, you can run More Reports in Excel for Employee Time & costs as Projected paycheck data in Excel format.

"and see the hours worked on a particular day but where to find that information in table form?  Is it "Time Tracking"?"

Yes. It isn't Timesheets. It is Time Records. Each Time Record or task is Stand Alone. The Single-Activity view shows it. The Weekly view Presents it in that combined perspective.
