I can furnish you with some details about generating sales report without including the customer information.
A Sales by Customer Summary report display the total amount of sales you had per customer that you have. You can filter this specific according to the data you need. However, you cannot remove the column allocated for your customer's name within QuickBooks.
You need not to worry though, you can download the report as an Excel file. Once downloaded, you can modify the report and remove the customer information.
The other way around is to download the Profit and Loss by month report. Here's how:
