Currently, we have an on-going issue where users, like you, receive an error message saying "Sorry, an unexpected error has occurred. Please try again" when adding a transaction to your projects.
Rest assured that we've already informed our product engineers about this and they're in all hands working to fix this as soon as possible.
In the meantime, you can manually select the name of your projects in the Customer or Payee field of your transactions. This way, you can now be able to add transactions to your projects.
In addition, I'd recommend contacting our Customer Care Support so you'll be added to the list of affected users. To do so:

I also can not add to my projects. Cannot add an invoice, bill, expense or purchase order. I can however add it to any existing projects that I have. Only new projects I have created since Friday I have this issue with. Please help asap. I need to have this entered today....
Hello TimWilken. This issue was reported last Friday.
That said, all projects that were created on that date are those affected ones. Rest assured, we've already alerted our product engineers to get this fixed as soon as possible.
Please give us a call so that you'll be added as one of the affected users. You can follow the steps provided by my colleague above.

As I have checked the investigation notes, our engineers are currently working on getting the Project page fixed.
As a recommended workaround, you can add the invoice, expense, bill, etc. of this project from the Plus option.

Let's try a couple of steps to check if a browser issue is hiding the project from the drop-down list, Antarse2600.
Just in case the issue persists, delete the invoice. Then, go to the Projects menu and recreate it under the correct project.

I am having the same exact issue. Any projects that I created or renamed since Friday do not show up in my search for projects or the pull down in Estimates/Invoices. I am unable to create a new Estimate or Invoice for any project that was created since then. I contacted support today about this and was told I would be added to the list. I anxiously await a solution to this problem.

Though both issues are related to projects, the issue mentioned in this thread was already resolved. We have an open investigation about the projects not showing in the search results. We'll keep you updated once our engineers provide more details about this.
For now, you'll need to go to the project without using the Search option. You can also log out and log back in to refresh your account.

It works for me now.
I can open up existing estimates or invoices and change it to a project under a customer.
However, after creating a project you must log out and sign in again, to see the new project in the drop down.
I appreciate you for letting us that you can now create an estimate and an invoice for your projects. Currently, we still have an ongoing investigation about getting an unexpected error when viewing the transactions tab in the Projects window (INV-38345).
As a workaround, you can run a Transaction List by Customer report and filter it to show only projects or a specific project depending on your needs.

You may also use an incognito browser in accessing your QuickBooks Online account and viewing your project-related transactions.
