Intuit removed the video tutorials from your program. I put them here, for us:

Everything will be Items. You set up and use Items for this and they will be two-sided, so that they link to expense and to income.

Yes, you set up a Vehicle and name it Misc Charges. You set the item and its rate, such as different plot sizes. You use the Mileage Log for this purpose. It shows in a Different Report = Mileage reports, at the bottom of the Jobs, Time & Mileage reports submenu. Don't look for Unbilled Costs; this is not a Cost for you; it is an Internal Charge function. Your Cost comes from operations, supplies, consumables, and buying new equipment.
In addition to the reference information qbteachmt provided, I would also check at your local library for information. My library system has books, videos and e-books for various versions of QuickBooks and the reference librarians are very helpful in finding resources outside of the library. They've even offered classes for members to go over basics.
I would also check YouTube. They have a large number of QuickBooks topics and training videos that you can watch at no charge.
