We are a creative business that uses QuickBooks Pro 2017 desktop. The owners of the company object to the appearance of the email - not the invoice itself which I know I can modify. The email is the first thing the client sees and has a large number in the right corner that is offensive to the owners and they presume offensive to our customers. Aesthetically, it says "bad news" to the customer before they even open the email. Can that email be modified?

Thanks for posting here in the Community. I can help remove that section, so your client's will only see the template that you created when sending an invoice in QuickBooks Desktop (QBDT).
All you need to do is to enable the Use Plain Text format for e-mailed invoices on the Preferences, and I'm happy to show you how:
1. Go to Edit menu at the top, then choose Preferences on the drop-down.
2. Pick Send Forms on the left panel, and go to My Preferences tab.
3. Put a checkmark on the Use Plain Text format for e-mailed invoices, then click OK.
That should remove those large number in the right corner of the email. You may also create a dummy invoice and send it to your personal email to double-check. For your reference, you can check out this article for further guidance: Customize email templates in QuickBooks.

I am sending payroll stubs by email from Outlook and half of the employees are receiving a winmail.dat file and the other half are receiving a PDF file. In my instance of QuickBooks Desktop Pro I do not have the option to "Use Plain Text..." in Preferences>Send Forms>My Preferences section. Is there someplace else I should look for this?

Ideally, a PDF file will automatically be attached to every form you send, including pay stubs. The winmail.dat file received by your employees can be related to how their provider accepts the email.
You don't have to change any preferences in QuickBooks Desktop. Instead, you can update the formatting template of email messages directly from Outlook. You can read this article for the detailed steps: Winmail.dat is attached to an email instead of a .pdf file when sent from QuickBooks through Outlook.
