You can't change the names of built-in fields in QuickBooks Online before you export your data. However, once you export a report to Excel, you can easily manually rename the column headers to whatever you need.
If you want more control over the data before you export it, try creating a custom report. This feature lets you select exactly which fields you want to include, so you don't have to deal with extra columns you don't need.
