Yes, QB won't do this sort of thing with its built in Statement feature.
To get this sort of control, use the BRC A/R Statements Pro app. It allows you to fully customize the statement details table. You can show or hide transaction detail lines, most any data field used on your sales, and group and sort the statement data as you see fit.
You can also include custom text messages, and optionally add your logo and/or your signature to each printed statement, among other useful features.
