From the left menu, select Banking.
On the Banking page, select Update.
Make sure you have selected the appropriate account.
QuickBooks Online tries to connect to your bank to manually update your account.Select Save and connect.

The problem is, as I explained, that the edit button does not take me to an 'edit sign in' option. It's a different edit option.

Thanks for letting us know the process you did to change your bank account's sign-in info. The steps you've followed and those shared by my colleague @HoneyLynn_G can generally help update the bank's credentials.
Since they aren't working for you, I'd suggest using a different supported browser to alter the login information. It's possible there are outdated files that need refreshed from your browser.
Once you've signed in, try re-updating the credentials using the steps above. If the same issue persists, disconnect the bank, and re-connect it using a new connection.
