I am trying to enter some older invoices into my accounts (to complete the year) but when I try to mark as paid it will only enter todays date. I need to change this to when it was actually paid Can this be done?
When paying invoices in QuickBooks Self-Employed, it always defaults to the day you record the payments. Thus, it is working as designed.

Yes, you can enter the exact payment date of the invoice in other the QuickBooks Online versions (Simple Start, Essentials, and Plus). You can check this link to see what version suits your company needs: https://quickbooks.intuit.com/pricing/.
We're unable to upgrade your QuickBooks Self-Employed account to other QuickBooks Online versions. You'll want to cancel your current subscription (QBSE) and subscribe to a new one (QBO). You can use the same credentials when subscribing to a new product.
Your data in QBSE won't be transferred directly to QBO. You'll want to reenter then to your new account manually.
