I see this response is from 2017 - is this still the case?
I also have a client who assembles their product to create a final product, which they consider their inventory and which they sell.
We are using quickbooks online plus.

So, QBO Plus version now does have an inventory module, where you can use bundles to track your assemblies.
However, there is still no dedicated manufacturing module, in which case you should probably use an app like Katana. It will manage your material and finished goods inventory, manufacturing costs and order fulfillment process. Invoices/bills get pushed to your QBO account.
