You would only write off food waste is you originally booked food purchases to an inventory assets. If you are using an expense account for food purchases, you have already expensed the entire cost.
If you want to track the amount of food waste, you could set up another expense account, but the entry would be to reduce food costs and increase food waste. The end result is the same.
