When entering expenses in QuickBooks Self-Employed, just put the name of the vendor in the description field. Then, enter the amount, select the Type and Category. If there are missing transactions, be sure you set the filters to All to show everything.
Could you please clarify what you mean by this, "but the line item to list the vendor is not showing anymore". If this means your transactions are missing, just set the filters to All.
After entering your expenses, you can run the Profit and Loss report to see your accumulated expenses in a certain period.

I have some additional steps so you'll be able to view your line items. You'll want to uninstall and re-install the app. This process will refresh and update the app in a clean slate. Thus, fixes the unexpected behavior of the app.
To uninstall:
After uninstalling, open the Google Play Store or the App Store, look for the QBSE app and follow the steps that'll guide you through the rest.
Once done, log back into your account and check the line item of your transaction again.
