At this time, there isn't an option to change the tax name once it has been set up successfully. But you can create a new one and use it when creating your invoices. to do so:
Here's an article you can read to learn more about how you can create a new tax rate: How do I set up sales GST/VAT rates and use them on forms? (International QBO)
Once done, you can go ahead and create an invoice. Make sure to select the new tax name you recently created under the Tax column of your invoice.
