I created 2 custom templates - listed under Custom Form Styles and set as my default but how can I make sure these are being used when I create new estimates or invoices?

It's nice to see you again in the Community. I'm here to help ensure you are using your custom templates in your estimates and invoices.

 

You're already on the right track when setting your forms as default. So when you create an invoice or estimate, these created templates will be applied.
