QuickBooks Online (QBO) only depends on the information sync from a third-party application. Since the inventory remains unchanged even it's adjusted, I recommend reaching the Zoho Inventory customer support. This way, they can provide some information on how the product inventory syncs in QBO. They can also confirm if it uses inventory products or a default sales item for all invoices.

Afaik, Zoho Inventory only supports their own accounting app. You have to use a connector to integrate with your QBO account.
I contacted Zoho:
"As of now we can sync Invoices to QBO but it won't change the stock in QBO. When an Invoice or Bill syncs to QBO, the items will be created in QBO as Non-Inventory. The stock details needs to be checked from Zoho Inventory itself"
