You can choose how to receive payment on each invoice you send. Changing them on one invoice will only affect the invoice you change and won't affect the company preferences.
There are two ways to change your invoice payment options old invoicing and new invoicing. And I'm here to guide perform the steps.

It appears that Zelle is not one of the payment options though- so how do I make it one?

Currently, QuickBooks Online doesn't support Zelle as a payment option. Although, your customers have several alternative methods to pay their invoices online, including credit cards, debit cards, PayPal, Venmo, and ACH bank transfers.

In the meantime, I'd suggest exploring third-party applications that can assist you in processing customer payments. You can easily find these apps by navigating to the Apps menu and clicking Find apps. Then, search for the app from there.
