QB 2016 is outdated and (afaik) won't support BigSur. I learned company will fully support BigSur within next month at the earliest. Consider to purchase QBD Mac 2020 or QBD Mac 2021.
if I upgrade to 2020, will my files port over and still work from 2016

The QuickBooks Desktop for Mac software has a 3-year life-cycle. When you upgrade, you need to go from 2016 to 2019 to 2020. With this, you need to restore your company file in between so you're able to seamlessly use it to 2020.
Before you upgrade, you'll first need to make sure your computer meets the system requirements. Then, you need to make sure you create a backup copy of your company file for future use.
