I am happy to show you an easy solution for creating an invoice and not sending it right away!
On the Create Invoice screen, you have the option to just Save or Save and Close the invoice. When you choose Save, your changes will be recorded, but your invoice will not be sent off to your customer.
Another suggestion is to leave the Customer email field blank.
