Welcome and thank you for posting here in QuickBooks Community. I'll share steps to ensure you're able to see journal transactions and the Chart of Accounts.
Currently, viewing journal entries in the QuickBooks app is unavailable. You can only perform this through the browser. That said, I suggest signing in to your QuickBooks account within a browser and view all entered JE from there.
On the other hand, the Chart of Accounts is located under the Hamburger icon and you'll see this feature in the left panel. I've attached a screenshot below for visual reference.
However, if you're still unable to view the COA, you'll have to make sure that your iOS device is updated to the latest version. This is because the newer versions have the updated patch that can fix issues with the device and the app. Then, I'd suggest uninstalling and reinstalling the QBO application. This is to ensure you get the most recent version of the application. You can get the detailed steps in this article: QuickBooks App for Windows and Mac: General support. Please note that this will not delete all the settings/info that your bookkeeper has already entered.

Ok, your screenshot looks exactly nothing like the app that I have installed which is version 21.02.1. I am on the most up to date version of iOS.
My hamburger icon is in the bottom right corner and does not have Chart of Accounts anywhere.
