Service Items setup to record both Cost of Sales (COGS) and Revenue

I am perplexed on just how challenging it is to setup an Service item or Non-Inventory item to record both Cost of Sales (COGS) and revenue.  I have tried to use both item types and neither one can seem to record Revenue and COGS for a service company. Can someone help ?

Service and non inventory items are not designed to hold value, as a result when you buy the item, and to have cost you have to buy it, the cost posts to the expense account listed on the item screen at that time.

You can not use it to post income and some cost you filled in on the item screen.
