When I transfered Quickbooks Mac to Quickbooks Online, all of my tax exempt invoices became journal entries. How do I change them back?

There are certain limitations from importing your data since both platforms are different. Please check this article for more details: What to expect when you switch from QuickBooks Desktop to QuickBooks Online.

In the meantime, you'll need to delete and recreate those tax exempt invoices became a journal entries.

Here's how:

1. Open the journal entry.
2. At the bottom, click More.
3. Choose Delete.
4. Select Yes to confirm that you want to delete the transaction.

Once done, you can recreate those tax exempt invoices

Also, for deleted transactions, you can pull up the Audit Log report to view the changes made and who made them. However, you'll need to have full access rights to run this report. You can learn more from this link: Learn about the audit log.
