We are based in Canada and invoice only in USD to ALL of customers regardless of their home country. I want to create products in USD but it's defaulting to CDN.

You have to enable the multicurrency feature and set USD as the home currency before creating the product lists. You should purge your QBO account to start from scratch. As an additional option, utilize the backup restore app later to lower any risk.

It's important that al;l your transactions be entered correctly for your books to be well balanced. QuickBooks Online is a great tool able to help you keep track of transactions in order to see the profit of your business. I can provide some information about products and services.
As mentioned by Fiat-Lux - ASIA, the default currency for the price of Products and services is set to the home currency of your QuickBooks account, which cannot be changed. In order to set this to USD, you would need to do this during the initial setup of your account. To do so, you'd need to remove all data from the account or start from a new subscription. The ability to delete all information from an account to start over can only be done for an account that is less than 90 days old, and this change is permanent, so there is no going back from purging the data in an account. you can view the information on how to delete data to start over, or how to start a new account from the linked article.
