I can see how going through each item changing the Income Account and Sales Tax Category fields would be inconvenient, @DMalt.
QuickBooks allows us to have flexibility in terms of choosing the right accounts for your items. At the moment, we're unable to change the default categories when adding new inventory items. You'll have to go through each of the products and services to assign their corresponding accounts.
