Based on the information you've provided, you can enter a Due Date on your invoice and enter additional line items for each Service Date. If you prefer to have individual invoices for each date, you can send your customer a monthly statement. However, I feel you would benefit from using Projects. This keeps all of your customer information in one project, so you can track hourly labour costs and profitability by project. You'll also be able to invoice customers for project expenses.
