After speaking with a QB tech team they had me change the sales tax payable in the Commerce app to Texas "State Comptroller Payable: Shopify Sales Tax." It now records the tax collected into the "Channel Sales Tax Payable" area it still doesn't show it in the Comptroller area, nor the taxes area of QB. For now, I'm just making entries manually, but at least QB gives me a total collected.
