Once the GST is turned on and set up in QuickBooks Online we're unable to turn it back off. You'll have to set your default tax rate to Out of scope in your company settings to not calculate GST on your transactions. Let me guide you on how:

Hi! I have set up GST as mentioned here out of scope, but all my Sales Receipts still have a GST. Can you please find a solution for how we can simply turn off / on GST if needed? I have canceled a GST and now my QBO account is a mess. Thanks.

Thanks for posting in the Community.
Turning off GST in QuickBooks Online is unavailable at this time. You'll have to edit each transaction and set the tax code to Out of Scope. That way, there's no GTS calculated and reported in your BAS.
If you have an accountant that has QuickBooks Online for Accountants, you can add them as an accountant user in your QBO account, and they can help you reclassify your transactions at once to the correct GST code.
