To ensure that we are on the same page, would you like attract GST on your income but not on your invoices. Is that correct? Please note that once you assign a GST code on a transaction this will reflect on your GST reports.

Yes that is correct. Parents that have children in a family day care in Australia do not pay GST. However I have to pay GST on that income. How do I invoice the parents

We can create an invoice in QuickBooks Online with GST code set to out of scope and then export the invoice. Once done, please send the invoice using your personal email to your customer. Doing so, we'll be able to change the correct tax code on the invoice recorded in QuickBooks Online without changing the amounts which was already emailed to your customer.
Also, I would recommend consulting an accountant for an accounting advice and to confirm if we can record the GST for income can be recorded via journal entry in QuickBooks Online.
