I'd like to help you with your concern about canceling the payment method by sharing possible scenarios I could think of.
Are you referring to your subscription payment method? If so, you can cancel it by changing it. To do so, you can follow the steps below:

However, if you're referring to the invoice payment method, you can turn it off from the Sales menu. Here's how:
