I can definitely provide the steps for you to follow. When you add some attachments to transactions, you can still remove it by clicking the little X icon beside the file name. This is regardless if the journal entry is already saved or copied. See this:
You can also delete it from the Attachments page. To do that, perform the steps below:
If you still can't delete it, open a private browser. Unexpected issues in QuickBooks can sometimes be affected by the amount of data stored in the cache. This is because a regular browser will constantly overwrite the data and will not remove history unless done manually.
Private browsing will not save any history, so it's a great place to identify issues in the browser. Use these keyboard shortcuts to launch a new private window:
Once done, delete the attachments again and see if it works. If it does, clear the cache to resolve browser issues in QBO. Using a different browser can also help.

I use to have the ability to "X" and delete previous attachments but that has been removed:
Was there an update or a way to go back to having that capability.

We currently have an ongoing issue with the missing X option when trying to remove an attachment. Rest assured our product engineers are diligently working on a permanent fix.
To ensure you'll get an update about the resolution status, I suggest reaching out to our QuickBooks Support Team. This way, they can add your company to the list of affected users.
