Let me share some insights about changing the donors label to customers in QuickBooks Online.
I'd like to let you know that being able to change the donors label to customers isn't available to the international versions of QuickBooks Online. This is currently offered to the US versions.

For now, to accomplish your goal, I recommend checking for a third-party application that integrates with QuickBooks and supports this functionality.
