You need to create a new profile of your customers and set GBP as the currency. Then you will be able to create the invoice in GBP to them. As as additional option, open a Wise Business account to accept payments in GBP for free and connect it to your bank feeds.

You'll just have to set GBP as the currency in your QuickBooks Online (QBO) account's customer profile. Once done, you can now create an invoice in GBP.

You can now create an invoice in GBP for this client. Also, from now on, new transactions you record with the customer will be in GBP.
