Let me provide two scenarios based on your concern above about assigning a new customer to a sales category, @rick-howard. This way, you'll be able to effectively manage your account's sales transactions.
First is you want to send invoices to the new customer in French language. To do this, you'll have to set this preference in the Customer information page. Here's how:

Second is you want to assign the new customer to a specific sales category/account. However, this option isn't currently available. As a workaround, you can use an item that's set to a specific account in the Products and Services page. Just make sure to select it every time you create transaction for this customer. For the detailed steps, kindly refer to this article's Create a category section: Group your products and services into different categories.
To track your sales for a specific customer, you can pull up the Sales by Customer Detail report. Just go to the Sales and customers section in the Reports menu. You can customise it to focus on the details that matters most. Then, have it memorised to save its customisation settings.
