Is the sales transaction you're trying to assign GST on sales is downloaded from the bank feeds? If yes, let's check if the account set up is not a credit card account. Know that there is no option to receive income on a credit card type account and hence no GST on Sales is visible when money is received on a credit card account. Any money in transaction on credit card account can either be recorded as a transfer or a credit card payment but not as an income.
You'll have to manually create the sales transaction through + New and make sure to select a bank account type for Deposit to field.
Furthermore, let's check if your GST is turned and GST on sales is active from the tax rates. Here's how:
