Hi there, gerald-gierer.
Currently, the option to assign a specific template to a customer is unavailable in QuickBooks. You'll need to manually choose the right template every time you enter an invoice to a customer.
However, you can create a recurring invoice for a specific customer. This way, the system will use the same template you select upon creating the recurring transaction.
Here's how:
For additional information, you can click this article: How to create a recurring invoice and manage recurring transactions. This also provides steps on how you can manage recurring transactions.

It's three years later and I'm wondering if the ability to assign a template to a customer has been updated.
Thank you for joining in on this thread, @MickeyT1.
It's my pleasure to your concern about managing invoice templates in QuickBooks Online (QBO).
Assigning a template to a customer in QuickBooks Online is currently unavailable. You may need to follow the same workaround, which is to manually select the appropriate template every time you enter an invoice for a customer.
However, you can use the recurring templates. These templates save you time generating the same invoice every time. You will need to create a template for each customer. To learn more about this functionality, please click this link: Create recurring transactions in QuickBooks. It provides steps on how you can manage recurring transactions.
Having this option is indeed a great idea. That said, I encourage you to submit feedback to our product developers to request the implementation of this attribute in the future.
Our developers might work on this idea in the future, so stay tuned for email updates and in-product popups.
For your reference, check out this link: How to Submit Feedback. Also, I recommend visiting our Firm of the Future site. It is where we share recent happenings and future developments, such as updates to newly added features.
