There must be some way of getting to the signature and deleting it or dealing with margins better than current defaults.

As of the moment, there isn't an option to delete the signature requirement section of your quote. This is because it is included in the default template and the margin depends on the number of line items you've included in your quote.

I also asked for this Acceptance signature requirement to be optional on the template 12 months ago. Please consider this request QBO.
